Grilled Apricots with Yogurt & Honey



This is one of my favourite summer desserts, it’s simple, quick and delicious. It is also great for breakfast topped with a little bit of granola!

SERVES 4


INGREDIENTS


2 apricots or peaches, halved and pitted 2 cups plain Greek yogurt – if you want it to be more indulgent go for full fat, otherwise 2% works 4 Tbsp chopped toasted walnuts (pecans and pistachios also work really well) 4 Tbsp honey


HOW TO MAKE IT

  1. Start by toasting the nuts. The easiest way is to simply toss them in a dry pan set over medium heat for about 5-8 minutes, stirring them as they toast.

  2. Heat a grill (or a stovetop grill pan) until hot.

  3. Slice your peaches/apricots in half and cook until they are nicely caramelized on the outside, this should take about 5 minutes. You want them to be soft but to keep their shape.

  4. Top each fruit half with 1⁄2 cup yogurt, 1 tablespoon walnuts, and 1 tablespoon honey.
