Hibiscus Cooler



As kids my sister and I would always drink cold hibiscus mixed with fresh lime juice and I suspect a fairly heavy dose of sugar! I adore hibiscus and this is the perfect way to cool down on a hot day and makes a great addition to any barbecue or picnic! If you can't find hibiscus, cranberry juice also works quite well.



Ingredients

  • 4 cups boiling water

  • 8 bags hibiscus tea

  • 3-5 tbsp honey

  • ice

  • 2 cups sparkling water (optional if you would rather avoid fizz)

  • handful of mint leaves

  • 2 limes

  • berries for garnish

Instructions

  1. In a large pitcher, combine tea bags, honey, and boiling water; let steep 30 minutes to 1 hour, depending on how strong you like your tea.

  2. Remove tea bags.

  3. Add ice to pitcher and stir in sparkling water, squeeze in limes.

  4. Add mint.

  5. Refrigerate for 1 hour or until chilled.

  6. Garnish with berries.

  7. Serve.
