Ingredients


1 cup cooked quinoa

1 can black eyed peas, drained and rinsed

Cherry tomatoes, diced

Sundried tomatoes, chopped into small pieces

Fresh dill, chopped

Fresh parsley, chopped

2 spring onions, finely sliced

Za'atar spice blend

1 tsp Toasted pine nuts

1 ripe avocado, sliced


For the Vinaigrette


3 tbsp olive oil

1 tbsp red wine vinegar

1 tsp Dijon mustard

1/2 tsp garlic powder

Salt and pepper to taste


Instructions


Prepare the Base:Cook the quinoa according to package instructions. Once cooked, let it cool to room temperature or chill in the fridge.


Assemble the Salad:In a large bowl, combine the cooked quinoa, drained black eyed peas, cherry tomatoes, sundried tomatoes, chopped dill, parsley, and spring onions.


Make the Vinaigrette:In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic powder, salt, and pepper until well combined.


Dress the Salad:Pour the vinaigrette over the salad and toss gently to coat all the ingredients evenly.


Finish with Toppings:Sprinkle za'atar and toasted pine nuts over the top. Add sliced avocado just before serving for creaminess.
