Delicious, umami-packed mushrooms and buttery rich avocado make for the perfect pairing in this elevated avocado toast! Easy, satisfying, and nourishing! This is what happens when you take two of my toast favourites and marry them! Mushroom toast + avocado toast = today’s recipe for Mushroom Avocado Toast. This super easy and simple recipe is packed with flavor and is delicious as a quick lunch, brunch or breakfast.
2 cups mushrooms, sliced, any variety
2-3 tsp extra virgin olive oil
2 cloves garlic, crushed
Chilli flakes (optional)
Sprinkle of thyme
Salt and pepper to taste
2 slices bread, toasted
Toasted pine nuts
Heat a small pan with olive oil, throw in the crushed garlic and let it sizzle.
Meanwhile roughly slice your mushrooms and add them to the pan.
Add the dried thyme and a pinch of salt and pepper and fry for roughly 5 minutes, keep stirring.
While mushrooms are cooking: chop your avocado and mash it with the juice of 1/2 a lime and a pinch of chilli.
Place your toast into a toaster.
Top the toast with the smashed avocado followed by the mighty mushrooms and sprinkle with toasted pine nuts.
This works really well with a boiled egg on top.
If you don't have pine nuts, sesame seeds also work really well.
Herbs like rosemary, oregano, parsley or sage are also options for adding more layers of flavour.
