This delicious cake is grain free, sugar free but certainly not taste free!
I have found recently that I am constantly searching for healthier dessert alternatives, I love a little piece of something sweet after a meal, but I want to avoid eating a whole Cadbury Chocolate Bar. This cake is easy to make, and satisfies my sweet tooth!
Ingredients
Dry ingredients
1 ½ cups almond flour
⅓ cup coconut flour
1 teaspoon baking soda
¼ teaspoon salt
Handful chocolate chips, or simply break up your favourite chocolate bar
Wet ingredients
2 eggs, room temperature
¼ cup melted and cooled coconut oil
¼ cup pure maple syrup
½ cup freshly squeezed orange juice
Zest of 1 large orange
¼ cup unsweetened almond milk (or any plant based milk)
Instructions
Preheat oven to 180 Degrees C (350 F). Line an 8x4 inch loaf pan with parchment paper (or spray generously with a nonstick cooking spray).
In a large bowl, mix together all the dry ingredients.
In a separate large bowl, whisk together wet ingredients. Add in your chocolate chips last. NOTES: Make sure your coconut oil is melted and cooled otherwise it will become clumpy. This applies to your eggs too - if necessary try running them under warm water for a couple of minutes.
Add dry ingredients to wet ingredients and mix together well. Pour batter into the pan and spread it evenly. Bake for 40-45 minutes (until a fork/toothpick comes out clean).
If you are really craving chocolate you can even add a chocolate glaze. Use a bain marie to melt your chocolate and pour over your cooled cake. Garnish with extra orange zest.
