This delicious tahini granola made with orange, oats, seeds and nuts for something a bit special in the mornings. This wintery granola is sweetened with maple syrup and generously spiced for a nice warming flavour.
INGREDIENTS
1 ½ cup raw almonds
½ cup sunflower seeds (pumpkin seeds also work)
2 cups oats (I have tried making this recipe with a couple of different types of oats and so far all have worked out)
¼ cup maple syrup (or honey)
⅓ cup whole grain tahini
2 tbsp coconut oil
1 tbsp cinnamon
¼ tsp cardamon (or clove)
2 oranges - zest
pinch of sea salt (optional)
RECIPE
Preheat the oven to 150C/300F fan and line a baking sheet with baking paper.
Place the almonds into a blender and pulse until they are broken up into small pieces (not too fine).
Mix them in a large bowl with the sunflower seeds, oats, spices and orange zest.
Add the coconut oil, maple syrup and tahini in a small saucepan and stir over medium heat for 2-3 minutes, until well mixed.
Pour it over the dry ingredients, and mix until well combined.
Transfer the mixture onto the baking sheet and spread it by pressing down with your hands, this will help it to stick together.
Sprinkle with sea salt and bake for 40 minutes, until the edges are slightly browned.
Remove from the oven, allow to cool for 15 minutes and break up the granola with your hands into large chunks.
Store in an air-tight container.
Enjoy with milk, with Greek yogurt and seasonal fruits, or on its own as a delicious afternoon snack!
