Bored with your regular breakfast routine? Why not mix it up and try these delicious, healthy banana oatmeal pancakes? Made in the blender, these pancakes are so easy to whip up. They also happen to be naturally gluten free, dairy free and contain no flour or added sugar! Enjoy a simple yet tasty breakfast and nourish your body with healthy ingredients. Everybody will be asking for seconds – this is one recipe you just can’t miss!
Ingredients
2 medium ripe bananas
2 eggs
Handful of blueberries (fresh or frozen)
1/2 cup unsweetened almond milk (any other plant based milk works too)
1 ½ cups oats, gluten free if desired
2 tsps baking powder
½ teaspoon ground cinnamon
A dash of salt
Coconut oil, for cooking
Instructions
Add all of the ingredients to a blender and blend on high until completely smooth. This should take between 30 seconds to 1 minute. Let the batter sit in your blender while you heat your pan up. I like to let the batter sit for 5-10 minutes.
Lightly coat a pan with coconut oil and place over medium heat. Once pan is hot, add a dollop of the batter to the griddle for each pancake and cook for 2-4 minutes until the pancakes rise and you can easily slide a spatula underneath.
Flip the pancakes and cook until golden brown on both sides.
Wipe your pan and repeat with more oil and remaining batter.
Customize your pancakes
Mix-ins: Instead of blueberries why not try another berry, some nuts, or even some chocolate chips!
Toppings: where is the fun in pancakes without toppings?! I love adding extra berries, banana slices and a drizzle of honey or maple syrup. I sometimes add a little yoghurt and some nuts too.
Make minis: make cute little mini pancakes by dropping just 1-2 tablespoons of batter into your pan at a time!
